Cup Cakes
Ingredients
125 grams butter, softened
1 tsp vanilla
½ cup caster sugar
2 eggs
1 cup flour or 1 cup self-raising flour
2 tsp baking powder
1/4 - 1/2 cup milk - if you want to stretch the batter put
1/2 cup
Cream butter, vanilla & sugar till light and fluffy.
Add eggs one at a time, beating well after each addition Sift flour (and
baking powder) into mixture, fold with a spoon. Add milk, stir.
Bake 190*C for 10-15 mins
If you want chocolate muffins add 2 Tbsl cocoa and a bit
more milk.
You can add chocolate chips, M & M’s, raisins
or anything.
They all taste good and freeze well!!!
This mixture will make about 12 med and 24 mini muffins.
