Double Chocolate Muffins
Ingredients
1 ¾ cups flour
1 tsp baking soda
1 cup caster sugar
¼ cup cocoa
100 grams butter
1 egg
1 cup yoghurt
½ cup milk
½ tsp vanilla
¼- ½ cup chocolate chips
Sift the dry ingredients into a large mixing bowl.
Melt butter, add the remaining ingredients and mix until
smooth.
Add the combined liquids to the dry ingredients (add chocolate
chips now) and fold together until the flour is dampened, but not smooth.
Put into muffin tins, sprinkle with chocolate chips if desired
before baking.
Bake at 200*C for 10-12 minutes.
Makes about 12 Medium muffins of about 30 mini muffins.
